According to local people here, ca say is a crossbreed between two very familiar poultry species—duck and muscovy duck—raised by locals for a long time. Ca say meat is very aromatic, naturally sweet, and rich; if cooked into porridge, the broth is sweet and fragrant with a delightful flavor. Braised ca say or grilled ca say are both rich and savory thanks to the thick, shiny golden, pleasantly chewy skin, while the meat itself is firm and sweet—neither too tough nor too soft—delicious to eat on its own or paired with sticky rice.
Boiled whole ca say is a favorite dish for many. After boiling, the ca say is chopped into pieces or hand-shredded and dipped in ginger fish sauce, which tastes ecstatic. Ca say meat is not soft and fatty like duck, nor tough, thick, and dry like muscovy duck. It is perhaps an intermediate, but leaning slightly towards muscovy duck. However, ca say meat has its own unique flavor—moderately tender, sweet, and non-fishy.
Tien Yen people prepare ca say meat and create a specialized dipping sauce that is beyond praise. The fish sauce used here comes from brands like Cai Rong, Van Yen, Cat Hai, rich with salty sea salt blended with the spicy warmth of ginger, plus a touch of lemongrass raising aromatic flavors of the mountains and forests.
It can be said that Tien Yen ca say might not be the most signature delicious dish in Quang Ninh, but it is definitely the most worth-trying dish when stepping foot in this land that cannot be found anywhere else. The strange yet familiar sweet taste of ca say meat combined with the rich flavor of fish sauce creates an irresistible ca say dish. Therefore, if you have the chance to visit Quang Ninh during the festival tourism season, tourists should not miss this specialty of the Quang Ninh land.
